  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (10-ounce) can diced tomatoes with green chilies (such as Ro*Tel), drained
  • 1 (1-ounce) packet taco seasoning
  • 1 (8-ounce) can refrigerated biscuit dough

For the Topping

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat, then add the chopped onion, red bell pepper, and green bell pepper. Cook for 5-6 minutes until the vegetables are softened.
  3. Season the Beef: Add the taco seasoning and diced tomatoes with green chilies to the skillet. Stir until everything is well combined, and let it simmer for 2-3 minutes. Remove from heat and set aside.
  4. Prepare the Biscuit Base: Open the can of biscuit dough and press the dough evenly into the bottom of the prepared baking dish to form a crust.
  5. Layer the Casserole: Spread the cooked ground beef mixture evenly over the biscuit layer in the baking dish.
  6. Make the Topping: In a mixing bowl, combine the sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir in the shredded cheddar and Monterey Jack cheese until well mixed.
  7. Add the Topping: Spread the cheese mixture evenly over the ground beef layer in the baking dish.
  8. Bake: Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
  9. Cool and Serve: Allow the casserole to cool for about 5 minutes before slicing and serving. Garnish with fresh chopped green onions if desired.
