Table of Contents

Ingredients

  • 1 1/2 lbs sirloin steak, cut into bite-sized pieces
  • 1 tablespoon black peppercorns, coarsely cracked
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup brandy or cognac
  • 4 cups beef broth
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)

Instructions

Sear the Steak

  1. Season and Sear Steak: Season the bite-sized pieces of steak with salt and generously coat them with the cracked black pepper. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Sear the steak pieces for 2-3 minutes, until browned on all sides. Remove from the skillet and set aside.

Make the Soup Base

  1. Sauté Onion and Garlic: In the same skillet, melt the butter over medium heat. Add the chopped onion and cook for 3-4 minutes, or until softened. Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
  2. Deglaze with Brandy: Carefully add the brandy or cognac to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes, or until most of the liquid has evaporated.
  3. Add Broth and Seasonings: Stir in the beef broth, Dijon mustard, Worcestershire sauce, salt, and black pepper. Bring the mixture to a simmer.

Finish the Soup

  1. Add Steak and Cream: Return the seared steak pieces to the skillet. Stir in the heavy cream and let the soup simmer for 10-15 minutes, or until the steak is tender and the flavors have melded together.

Serve

  1. Garnish and Serve: Ladle the soup into bowls and garnish with chopped fresh parsley if desired. Serve warm with crusty bread.

Cook’s Notes and Tips

  • Steak Doneness: If you prefer your steak more on the rare side, reduce the simmering time after adding the cream to avoid overcooking the meat.
  • Peppercorns: Use freshly cracked black peppercorns for the best flavor. Adjust the amount of pepper to your taste if you prefer a milder or spicier soup.
  • Alcohol Substitution: If you prefer not to use brandy or cognac, you can substitute with an equal amount of beef broth.

Variations

  • Mushroom Steak au Poivre Soup: Add 1 cup of sliced mushrooms to the skillet along with the onions for added flavor and texture.
  • Vegetable Additions: Stir in some chopped spinach or kale during the last 5 minutes of cooking for added greens.
  • Lighter Version: Substitute half of the heavy cream with whole milk for a lighter version of the soup.

Serving Suggestions

  • Crusty Bread: Serve with a warm, crusty baguette or garlic bread to soak up the delicious broth.
  • Side Salad: Pair with a simple green salad dressed with a light vinaigrette for a balanced meal.
  • Mashed Potatoes: Spoon the soup over a small mound of mashed potatoes for a comforting twist.
