Whether you serve them as a party appetizer or as part of a main course over rice, they are always a crowd-pleaser. The best part? You can make them easily in your slow cooker with minimal effort!

Ingredients

For the Meatballs:

  • 1 ½ lbs ground beef or ground chicken
  • ½ cup breadcrumbs (plain or Italian seasoned)
  • 1 large egg
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Honey Buffalo Sauce:

  • 1 cup buffalo hot sauce (such as Frank’s RedHot)
  • ½ cup honey
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder

Optional Add-Ins:

  • ½ teaspoon cayenne pepper for extra heat
  • 1 tablespoon lemon juice for a bit of acidity
  • 1 teaspoon smoked paprika for a smoky twist

For Garnishing:

  • Chopped green onions
  • Sesame seeds

For Serving:

  • Rice or mashed potatoes
  • Fresh vegetables like celery or carrot sticks

Instructions

Step 1: Prepare the Meatballs

  1. In a large bowl, combine the ground beef or chicken, breadcrumbs, egg, Parmesan cheese, parsley, garlic powder, onion powder, salt, and pepper.
  2. Mix until all the ingredients are well combined. Be careful not to overmix as it can make the meatballs tough.
  3. Using your hands or a cookie scoop, form the mixture into 1-inch meatballs.

Step 2: Sear the Meatballs (Optional)

  1. For extra flavor, you can sear the meatballs before placing them in the slow cooker. Heat a tablespoon of oil in a skillet over medium-high heat and brown the meatballs on all sides, about 2-3 minutes per side. This step is optional but adds extra flavor.

Step 3: Make the Honey Buffalo Sauce

  1. In a small saucepan over medium heat, combine the buffalo hot sauce, honey, butter, brown sugar, Worcestershire sauce, and garlic powder.
  2. Stir and cook until the butter is melted, and all ingredients are well combined. Remove from heat.

Step 4: Add Meatballs and Sauce to Slow Cooker

  1. Place the meatballs in the slow cooker.
  2. Pour the honey buffalo sauce over the meatballs, making sure they are well coated.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours, until the meatballs are cooked through and tender.

Step 5: Garnish and Serve

  1. Once the meatballs are cooked, give them a gentle stir to ensure they are well coated in the sauce.
  2. Garnish with chopped green onions and sesame seeds if desired.
  3. Serve the Honey Buffalo Meatballs hot as an appetizer, or over rice or mashed potatoes for a main course.

Cooking Notes

  • Meat Options: You can use ground beef, chicken, turkey, or even pork for this recipe. Ground chicken or turkey will yield a lighter texture.
  • Sauce Thickness: If you prefer a thicker sauce, leave the lid off the slow cooker for the last 30 minutes to allow the sauce to reduce.

Variations

1. Honey Garlic Buffalo Meatballs

Replace half of the hot sauce with barbecue sauce and add 2 minced garlic cloves for a sweet, smoky, and garlicky twist.

2. Cheesy Buffalo Meatballs

Add ½ cup shredded mozzarella or cheddar cheese to the meatball mixture before forming them. The cheese will melt into the meatballs, adding a delicious richness.

3. Spicy Buffalo Meatballs

Add ½ teaspoon of cayenne pepper to the honey buffalo sauce for an extra spicy kick.
