Ingredients

Main Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked elbow macaroni
  • 2 cups shredded cheddar cheese

Instructions

Step 1: Preheat the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Step 2: Cook the Ground Beef

In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if needed.

Step 3: Add the Onions and Garlic

Add the chopped onion to the skillet with the ground beef and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 4: Make the Sauce

Stir in the diced tomatoes, cream of mushroom soup, sour cream, Italian seasoning, salt, and black pepper. Let the mixture simmer for 5 minutes to allow the flavors to meld together.

Step 5: Assemble the Casserole

In the prepared baking dish, layer half of the cooked elbow macaroni, followed by half of the meat mixture. Sprinkle with 1 cup of shredded cheddar cheese. Repeat the layers, ending with the remaining 1 cup of cheese on top.

Variations

1. Spicy Husband Casserole

Add 1/2 teaspoon crushed red pepper flakes or 1 diced jalapeño to the meat mixture for some added heat.

2. Veggie-Packed Casserole

Add 1 cup of chopped bell peppers and 1 cup of sliced mushrooms to the onion mixture for extra vegetables and flavor.

3. Bacon-Topped Casserole

Sprinkle 1/2 cup cooked, crumbled bacon on top of the cheese layer before baking for a smoky, savory twist.
