Pineapple and Coconut Tres Leches Cake is a tropical twist on the classic Latin American dessert. This cake is soaked in a combination of three types of milk (tres leches) and topped with a sweet pineapple and coconut mixture, making it rich, moist, and irresistibly delicious. It’s perfect for any celebration or whenever you’re craving something indulgent and tropical.

Ingredients

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar (divided into ¾ cup and ¼ cup)
  • 1 teaspoon vanilla extract
  • 1/3 cup whole milk

For the Milk Mixture:

  • 1 (14 oz) can sweetened condensed milk
  • 1 (12 oz) can evaporated milk
  • 1 cup coconut milk (or heavy cream for a richer version)

For the Pineapple Topping:

  • 1 (20 oz) can crushed pineapple, drained
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract

For the Whipped Cream Topping:

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For Garnishing:

  • ½ cup shredded sweetened coconut, toasted
  • Pineapple slices or chunks (optional)

Optional Add-Ins:

  • 1 tablespoon rum in the milk mixture for an extra depth of flavor
  • 1 teaspoon lime zest for brightness

Instructions

Step 1: Preheat the Oven and Prepare the Cake Batter

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the egg yolks with ¾ cup sugar until thick and pale, about 2-3 minutes. Mix in the vanilla extract and whole milk.
  4. Gently fold the dry ingredients into the egg yolk mixture until just combined.
  5. In a separate bowl, beat the egg whites on high speed until soft peaks form. Gradually add the remaining ¼ cup sugar, beating until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter until fully incorporated.

Step 2: Bake the Cake

  1. Pour the batter into the prepared baking dish and spread it evenly.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for about 10 minutes.

Step 3: Make the Milk Mixture

  1. In a medium bowl, whisk together the sweetened condensed milk, evaporated milk, and coconut milk (or heavy cream). Stir until well combined.

Step 4: Soak the Cake

  1. Once the cake has cooled slightly, poke holes all over the cake using a fork or toothpick.
  2. Slowly pour the milk mixture over the entire cake, making sure to soak the cake evenly.
  3. Cover the cake and refrigerate for at least 4 hours, or overnight, to allow the cake to absorb the milk mixture.

Step 5: Make the Pineapple Topping

  1. In a small saucepan, combine the drained crushed pineapple, sugar, and vanilla extract.
  2. Cook over medium heat, stirring occasionally, until the pineapple thickens slightly and the sugar dissolves, about 5-7 minutes.
  3. Remove from heat and let the pineapple topping cool completely.

Step 6: Prepare the Whipped Cream Topping

  1. In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.

Step 7: Assemble the Cake

  1. Spread the cooled pineapple topping evenly over the soaked cake.
  2. Gently spread the whipped cream topping over the pineapple layer.
  3. Sprinkle the top with toasted coconut and garnish with pineapple slices or chunks if desired.

Step 8: Chill and Serve

  1. Chill the cake for an additional 1-2 hours to allow the flavors to meld.
  2. Slice and serve chilled. Enjoy your delicious Pineapple and Coconut Tres Leches Cake!

Cooking Notes

  • Coconut Milk: You can use coconut cream for a richer flavor, but be sure to adjust the sweetness of the milk mixture accordingly.
  • Toasting Coconut: To toast the coconut, place it in a dry skillet over medium heat, stirring constantly, until golden brown and fragrant, about 2-3 minutes.

Variations

1. Mango and Coconut Tres Leches Cake

Replace the pineapple topping with mango puree or fresh diced mango for a tropical variation that pairs beautifully with coconut.

2. Pineapple Rum Tres Leches Cake

Add 1-2 tablespoons of dark rum to the milk mixture for an extra layer of flavor reminiscent of a tropical cocktail.

3. Chocolate Tres Leches Cake

For a chocolate twist, substitute ½ cup of cocoa powder for some of the flour in the cake batter. Keep the pineapple and coconut toppings for a delicious contrast.

Lato slot parliamo di 2.000 titoli: Pragmatic con Gates of Olympus e Sweet Bonanza, Play’n GO, NetEnt, Big Time Gaming per chi ama i Megaways.

Lato slot ci saranno 2.500 e passa slot: i soliti Pragmatic con Sweet Bonanza e Gates of Olympus, Play’n GO con Book of Dead, qualcosa di NetEnt, Big Time Gaming per chi ama i Megaways.

Kundenservice spricht Deutsch Antworten kommen zuegig. Reguliert wird ueber Curacao, was man wissen sollte. Unterm Strich stimmt die Zahlungsmoral.

  30. I have been using Lottoland for about four months, so I have had enough time to form a real opinion. I found it because of the lottery betting, but ended up staying for the casino as well. The gaming section goes deeper than you would think, mixing lottery betting with standard casino games.

Providers on the casino side include Pragmatic Play, NetEnt, Play’n GO and Blueprint. Sweet Bonanza and Gonzo’s Quest sit in the popular section, although it does not compete with dedicated casino platforms on volume. What makes it different is the lotto side: results from lotteries around the world are covered, including some enormous jackpot pools. There are also scratch cards and instant win games.

The welcome offer here varies by region: typically a discounted first bet on a lottery draw. Casino bonuses appear occasionally, but the lottery offers are the main thing. Latest offers and any active codes should be verified at lottoland before you sign up. Rollover requirements are typical for the industry.

Minimum deposit is low: lottery entries start from a pound. Payment methods include cards, PayPal and prepaid options. PayPal payouts landed quickly, card withdrawals were two to three days. Verification was straightforward — passport photo cleared within the day.

Mobile works through a dedicated app, which is well designed and runs smoothly. Lottery draws update in real time, and the casino games play fine on mobile too. The help team is reachable through live chat, replies come within a few minutes. Licensed by the Gibraltar Gambling Commissioner and UK Gambling Commission, so there is genuine oversight. Overall a solid platform.

  42. I have been using Revery Play since around Easter, so I have a fair idea of how it runs. Came across it while looking for a new UK casino, mainly because the bonus terms elsewhere were ridiculous. The catalogue at Revery Play covers the main bases, with a good mix of slots, table games and live dealer.

The games are supplied by Pragmatic Play, NetEnt, Play’n GO, Nolimit City and Hacksaw Gaming. Sweet Bonanza and Gates of Olympus are front and centre, but I gravitate toward the high volatility section. The live tables run on Evolution, meaning all the major game shows and table games. Tables are staffed day and night, although peak hours can be crowded.

The sign-up offer at Revery Play is a 100 percent match up to 200 pounds with free spins. Wagering is 35x, not the worst but not a gift either. The latest promotions are worth looking at on reveryplay before you commit funds. There are weekly reload offers.

Minimum deposit is ten pounds. The standard UK payment methods are accepted. E-wallet cashouts came through same day, bank transfers ran a couple of days. Document check was straightforward — uploaded ID and it was approved overnight.

I use the mobile site on my phone and it runs well. No app needed, which honestly suits me. Customer service is available around the clock and wait times are short. They hold a Curacao licence, so be aware of that going in. Payouts have always come through for me.
