1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 large egg
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
4 cups beef broth
2 medium potatoes, diced
3 carrots, sliced
2 celery stalks, chopped
1 onion, diced
1 can (14.5 oz) diced tomatoes, undrained
1 teaspoon dried thyme
1 teaspoon paprika
2 bay leaves
Salt and pepper to taste
Instructions
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Mix until well combined and form into small meatballs, about 1 inch in diameter.
For added flavor, brown the meatballs in a skillet over medium heat for 5-7 minutes until golden brown. This step is optional.
In your slow cooker, place the diced potatoes, sliced carrots, chopped celery, and diced onion. Layer the meatballs on top, then pour the beef broth and diced tomatoes over everything, ensuring it's submerged.
