  1. In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Use an electric mixer or a wooden spoon to blend until smooth and well combined.
  2. Add the drained crushed pineapple, chopped pecans (if using), diced green bell pepper, diced onion, mayonnaise, Dijon mustard, and garlic powder to the cheese mixture. Stir until all ingredients are evenly distributed.
  3. Taste the mixture and adjust seasoning, adding salt and pepper as needed. For spice, consider adding cayenne pepper.
  4. Transfer the mixture to a serving bowl or shape it into a ball. If forming a cheese ball, wrap it in plastic wrap and chill in the refrigerator for at least an hour.
