3 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
2 large yellow onions, sliced
½ cup (1 stick) unsalted butter, cut into small pieces
1 cup chicken or vegetable broth
1 cup heavy cream
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoons freshly chopped parsley or thyme (for garnish, optional)
Instructions
Prepare the ingredients: Peel the potatoes and cut them into 1-inch cubes. Slice the onions thinly.
Layer the slow cooker: Begin by adding half of the potatoes to the bottom of the slow cooker. Follow with a layer of half of the onions, then sprinkle with half of the salt and pepper. Repeat with the remaining potatoes and onions, seasoning with the rest of the salt and pepper.
Add the butter: Distribute the small pieces of butter evenly on top of the final layer of onions.
Pour in the broth: Carefully pour the chicken or vegetable broth over the layered potatoes and onions.
Cook: Cover the slow cooker and set it on low for 6-8 hours or on high for 3-4 hours.
Incorporate the cream: About 30 minutes before serving, stir in the heavy cream.
