1 large ripe pineapple, peeled, cored, and diced
2 cups grapes, halved (red or green)
1 cup strawberries, hulled and sliced
1 orange, segmented and chopped
1 cup chopped pecans or walnuts
½ cup shredded coconut (unsweetened is preferred)
1 cup mini marshmallows (optional)
1 cup Greek yogurt (or sour cream for a richer flavor)
¼ cup honey
1 tablespoon lime juice
Instructions
Prepare the Fruits: Wash all the fruits thoroughly under cold running water. Dice the pineapple into bite-sized pieces, halve the grapes, hull and slice the strawberries, and segment the orange. Combine all the fruits in a large mixing bowl.
Toast the Nuts: In a dry skillet over medium heat, add the chopped pecans or walnuts. Toast for about 5-7 minutes, stirring frequently, until golden and fragrant.
Make the Dressing: In a medium bowl, whisk together the Greek yogurt, honey, and lime juice until smooth. Taste and adjust the sweetness or acidity as desired.
Combine Everything: Pour the dressing over the fruit mixture. Add the toasted nuts and shredded coconut. Gently fold the ingredients together.
