Ingredients

1 cup cornstarch
1 cup powdered sugar
1/4 teaspoon salt
1 cup unsalted butter, softened
1 teaspoon vanilla extract
1/2 cup mini chocolate chips (optional)
Colored sugar or sprinkles for decoration (optional)
1 teaspoon almond extract (optional)
Instructions
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cornstarch, powdered sugar, and salt until well combined. Set aside.
In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy and smooth, about 2 minutes.
Add the vanilla extract to the butter and mix until incorporated.
Gradually add the dry ingredient mixture to the butter, mixing on low speed until a soft dough forms.
If making chocolate chip meltaway cookies, fold in the mini chocolate chips gently with a spatula.
Using a small cookie scoop or a tablespoon, scoop dough and roll into balls. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
Gently flatten each dough ball slightly using the back of a spoon or your hand.
Bake in the preheated oven for 10-12 minutes, or until the edges are just starting to turn a light golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
