  3. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until creamy and smooth, about 2 minutes.
  4. Add the vanilla extract to the butter and mix until incorporated.
  5. Gradually add the dry ingredient mixture to the butter, mixing on low speed until a soft dough forms.
  6. If making chocolate chip meltaway cookies, fold in the mini chocolate chips gently with a spatula.
  7. Using a small cookie scoop or a tablespoon, scoop dough and roll into balls. Place the balls on the prepared baking sheets, spacing them about 2 inches apart.
