1 cup rolled oats
1/2 cup natural peanut butter (creamy or crunchy)
1/4 cup honey or maple syrup
1/4 cup chocolate chips (optional)
1/2 cup powdered sugar (or a sugar alternative like coconut sugar)
1/4 cup ground flaxseed (optional)
1 teaspoon vanilla extract
1/2 cup melted dark or milk chocolate for coating (optional)
Chopped nuts or coconut flakes for garnish (optional)
Instructions
In a large mixing bowl, combine the rolled oats, natural peanut butter, honey or maple syrup, chocolate chips, powdered sugar, and ground flaxseed. Stir until well incorporated.
Pour in the vanilla extract and mix it into your peanut butter mixture until evenly distributed.
Place the bowl in the refrigerator for about 15-30 minutes to chill.
Once chilled, take about 1 tablespoon of the mixture and roll it into a ball. Repeat until all the mixture is used.
For chocolate-covered balls, melt the chocolate in a microwave-safe bowl, dip each ball into the chocolate, and place on a parchment-lined baking sheet.
Return the chocolate-covered balls to the refrigerator for at least 30 minutes to harden.
