A refreshing and nutritious dish that embodies the vibrant flavors of the tropics, combining the creaminess of cottage cheese with the sweetness of fresh fruits.
Ingredients
Scale:
2 cups cottage cheese (preferably low-fat or non-fat)
1 cup pineapple chunks (fresh or canned, drained)
1 cup mandarin oranges (canned, drained or fresh)
1 medium banana, sliced
½ cup shredded coconut (sweetened or unsweetened)
½ cup chopped walnuts or pecans (optional)
½ cup mini marshmallows (optional)
½ cup plain Greek yogurt
2 tablespoons honey or agave syrup
1 tablespoon fresh lime juice
Instructions
In a large mixing bowl, combine the cottage cheese, pineapple chunks, mandarin oranges, and sliced banana. Gently fold the ingredients together using a spatula.
Add the shredded coconut, if using, along with any nuts or mini marshmallows. Fold everything together carefully.
In a separate small bowl, whisk together the Greek yogurt, honey, and lime juice until smooth.
Pour the dressing over the cottage cheese and fruit mixture, and gently stir to incorporate.
Taste the salad and adjust the sweetness by adding more honey if desired.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
When ready to serve, give the salad a gentle stir and transfer it to a serving dish.
