Ham and Cheese Biscuit Sandwiches are a delightful twist on a classic sandwich, perfect for breakfast, brunch, or a quick lunch. These homemade biscuit sandwiches bring comfort food to a whole new level, offering the satisfying crunch of a well-baked biscuit paired with the rich flavors of ham and cheese.

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
8 slices of your choice of flavorful ham varieties
8 slices of creamy cheese options (cheddar, Swiss, or gouda)
2 tablespoons Dijon mustard (optional)
Freshly ground black pepper, to taste
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt. Add the cubed butter and, using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Stir until the dough just comes together, being careful not to overmix.
Transfer the dough to a lightly floured surface and knead gently a few times. Roll out to about 1/2 inch thickness.
Using a biscuit cutter, cut out 8 biscuits and place them on the prepared baking sheet. Bake for 12-15 minutes, or until golden brown.
While the biscuits bake, prepare the filling. If desired, spread Dijon mustard on one side of each ham slice. Layer a slice of ham and a slice of cheese between the biscuit halves.
Once the biscuits are out of the oven, let them cool slightly before assembling the sandwiches.
Top each bottom half of the biscuits with the ham and cheese filling. Add freshly ground black pepper to taste and cover with the biscuit tops.
Place the assembled sandwiches back in the oven for another 3-5 minutes, or until the cheese melts to your liking.
