Greek Ham and Cheese Pie

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Thaw the phyllo dough according to the package instructions.
  3. In a large bowl, combine the diced ham, crumbled feta cheese, grated Parmesan cheese, chopped parsley, and dried thyme. Mix well to combine.
  4. Unroll the phyllo dough and cut it into 4 equal pieces. Place one piece of dough on a flat surface and brush it with a little bit of olive oil.
  5. Spoon about 1/4 of the ham and cheese mixture onto the center of the dough, leaving a 1-inch border around the edges.
  6. Fold the dough over the filling, forming a triangle or a square shape. Brush the edges with a little bit of water to seal the pie.
  7. Repeat the process with the remaining dough and filling, until you have 4 pies.
  8. Place the pies on the prepared baking sheet, leaving about 1 inch of space between each pie.
  9. Brush the tops of the pies with a little bit of olive oil and sprinkle with a pinch of salt.
  10. Bake the pies for 25-30 minutes, or until they're golden brown and crispy.
  11. Remove the pies from the oven and let them cool for a few minutes before serving.
