Ingredients

- 1 package of phyllo dough
- 1 cup of diced ham
- 1 cup of crumbled feta cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme
- Salt and pepper to taste
- 1 egg, beaten (for brushing the phyllo dough)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- Thaw the phyllo dough according to the package instructions.
- In a large bowl, combine the diced ham, crumbled feta cheese, grated Parmesan cheese, chopped parsley, and dried thyme. Mix well to combine.
- Unroll the phyllo dough and cut it into 4 equal pieces. Place one piece of dough on a flat surface and brush it with a little bit of olive oil.
- Spoon about 1/4 of the ham and cheese mixture onto the center of the dough, leaving a 1-inch border around the edges.
- Fold the dough over the filling, forming a triangle or a square shape. Brush the edges with a little bit of water to seal the pie.
- Repeat the process with the remaining dough and filling, until you have 4 pies.
- Place the pies on the prepared baking sheet, leaving about 1 inch of space between each pie.
- Brush the tops of the pies with a little bit of olive oil and sprinkle with a pinch of salt.
- Bake the pies for 25-30 minutes, or until they're golden brown and crispy.
- Remove the pies from the oven and let them cool for a few minutes before serving.
