A unique twist on the traditional French dip sandwich, featuring slow-cooked roast beef and homemade flaky biscuits.

For the Beef Filling:
2 lbs beef roast (such as chuck or brisket)
1 tablespoon olive oil
1 onion, sliced
3 cloves garlic, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
Salt and pepper to taste
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup milk
For the Dipping Sauce:
1 cup beef broth (from cooking the roast)
1 tablespoon soy sauce (optional)
Instructions
Prepare the Beef: In a large skillet, heat olive oil over medium-high heat. Season the beef roast generously with salt and pepper. Sear the roast on all sides until browned, about 3-4 minutes per side.
Add Aromatics: Transfer the seared beef to a slow cooker. Add sliced onion, minced garlic, beef broth, Worcestershire sauce, dried thyme, and additional salt and pepper. Cover and cook on low for 8 hours or until the beef is tender and shreds easily.
Shred the Beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and keep it warm while you prepare the biscuits.
Make the Biscuits: Preheat your oven to 425°F (220°C). In a large mixing bowl, combine flour, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
Add Milk: Pour in the milk and mix gently until just combined. Be careful not to overwork the dough; you want your biscuits to stay flaky.
Shape the Biscuits: On a floured surface, turn out the dough and fold it over a few times to create layers. Roll to about 1-inch thickness. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.
Bake the Biscuits: Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
Prepare the Dipping Sauce: In a small saucepan, combine 1 cup of the beef broth with soy sauce (if using). Heat over medium until warmed through.
Assemble the Dish: Split the warm biscuits and fill them with shredded beef. Serve with the warm dipping sauce on the side for dunking.
