Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ½ teaspoon salt
- 1 teaspoon ground cloves
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- ½ cup vegetable oil or melted coconut oil
- 4 large eggs
- 1 teaspoon vanilla extract
- ¾ cup chopped nuts (walnuts or pecans)
- ¾ cup chocolate chips (optional)
- Zest of 1 orange or lemon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, salt, and cloves until well blended.
- In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula. Tap the pan gently to release air bubbles.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the pumpkin bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
