Ingredients
Scale:
2 pounds of boneless, skinless chicken thighs (cut into bite-sized pieces)
4 medium carrots (peeled and sliced)
3 medium potatoes (peeled and diced)
1 large onion (chopped)
2 stalks of celery (sliced)
3 cloves of garlic (minced)
1 cup of green beans (trimmed and cut into 1-inch pieces)
6 cups of chicken broth (low sodium)
1 cup of water (optional for desired consistency)
2 teaspoons of dried thyme
1 teaspoon of dried rosemary
1 bay leaf
Salt and pepper to taste
3 tablespoons of all-purpose flour (optional, for a thicker stew)
Instructions
Prepare the ingredients: Begin by chopping all your vegetables and cutting the chicken into bite-sized pieces.
Brown the chicken: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Sauté until the chicken is browned, about 5-7 minutes.
Add the vegetables: Stir in the chopped onion, carrots, celery, and garlic. Cook for about 3-4 minutes, or until the onions are translucent and fragrant.
Incorporate the broth: Pour in the chicken broth and water, ensuring all ingredients are submerged. Add the potatoes, green beans, thyme, rosemary, and bay leaf. Stir gently to combine.
Bring to a boil: Increase the heat and bring the stew to a boil. Once boiling, reduce the heat to low.
