1 pound Great Northern beans, rinsed and sorted
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon smoked paprika (optional)
6 cups vegetable broth (or chicken broth for non-vegetarians)
1 medium onion, diced
4 cloves garlic, minced
1 cup carrots, chopped
1 cup celery, chopped
Fresh parsley, chopped (for garnish)
Optional: A sprinkle of red pepper flakes
Instructions
Rinse the Great Northern beans under cold water and check for any impurities. Soak them in water overnight or use the quick soak method by boiling them for 2 minutes, then letting them sit for 1 hour.
In a skillet over medium heat, sauté the diced onion, garlic, carrots, and celery until they become fragrant and the onions are translucent, about 5-7 minutes.
Transfer the sautéed vegetables into the slow cooker. Add the soaked beans, vegetable broth, salt, pepper, and smoked paprika (if using). Stir to combine.
Cover your crockpot and set it on low for 6-8 hours or high for 3-4 hours. The beans should be tender and creamy when done.
Once the beans are cooked, taste and adjust seasoning as necessary. If desired, mash a small portion of the beans with a fork to create a creamier texture.
Ladle the creamy bean soup into bowls, garnish with fresh parsley and a sprinkle of red pepper flakes. Enjoy warm!
