4 cups cooked chicken, shredded
1 cup celery, diced
1 cup green onions, sliced
1 cup red bell pepper, diced
1 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1 cup crushed cornflakes or crispy fried onions
1 cup shredded cheddar cheese
2 tablespoons butter, melted
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, diced celery, sliced green onions, and diced red bell pepper.
Add the mayonnaise, Dijon mustard, garlic powder, paprika, salt, and pepper to the chicken mixture. Stir until evenly combined.
Transfer the chicken mixture to a greased 9x13-inch baking dish and press down slightly.
In a separate bowl, mix the crushed cornflakes (or fried onions) with the melted butter until well coated.
Sprinkle the buttery cornflakes evenly over the chicken mixture.
Top with shredded cheddar cheese, covering evenly.
Bake for 25-30 minutes, or until the top is golden brown and bubbly.
