- 1 cup diced celery
- 1/2 cup finely chopped red onion
- 1/2 cup diced bell pepper (preferably red or yellow)
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey (or agave syrup for a vegan option)
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese (optional)
- Fresh herbs (like parsley or dill) for garnish
Instructions
- If using fresh peas, shell them from their pods. If using frozen peas, thaw them under warm water or in the refrigerator until soft.
- Dice the celery, red onion, and bell pepper into small, even pieces.
- In a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and honey until smooth. Season with salt and pepper.
- In a large mixing bowl, combine the peas, chopped vegetables, and dressing. Stir gently until everything is well-coated.
- Cover the salad and refrigerate for at least 30 minutes.
