  1. If using fresh peas, shell them from their pods. If using frozen peas, thaw them under warm water or in the refrigerator until soft.
  2. Dice the celery, red onion, and bell pepper into small, even pieces.
  3. In a medium bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and honey until smooth. Season with salt and pepper.
  4. In a large mixing bowl, combine the peas, chopped vegetables, and dressing. Stir gently until everything is well-coated.
  5. Cover the salad and refrigerate for at least 30 minutes.
  6. Before serving, stir the salad and sprinkle with crumbled feta cheese and fresh herbs if desired.
