Ingredients
Scale:
1 ½ pounds ground beef (85/15 blend for optimal flavor and moisture)
1 cup bread crumbs (preferably homemade or Panko for a lighter texture)
1 small onion, finely chopped (about ½ cup)
2 cloves garlic, minced
1 large egg
1 cup milk (whole milk preferred for richness)
1 tablespoon Worcestershire sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried parsley
½ teaspoon smoked paprika (optional for a hint of smokiness)
½ cup ketchup (for glaze)
1 tablespoon brown sugar (for glaze)
1 teaspoon mustard (yellow or Dijon) (for glaze)
1 cup finely chopped vegetables (optional)
Fresh herbs such as basil or oregano (optional)
Gluten-free bread crumbs (optional)
Instructions
Preheat the Oven: Begin by preheating your oven to 350°F (175°C).
Mix the Ingredients: In a large bowl, combine ground beef, bread crumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, thyme, parsley, and smoked paprika. Mix gently with your hands or a fork until just combined. Avoid over-mixing, as this can lead to a dense meatloaf.
Add Vegetables: If you are including vegetables, fold them into the meat mixture at this point.
Shape the Meatloaf: Transfer the meat mixture to a lightly greased loaf pan or shape it into a free-form loaf on a lined baking sheet. Make sure the loaf is even in thickness for uniform cooking.
Prepare the Glaze: In a small bowl, mix together the ketchup, brown sugar, and mustard until well blended. Spread half of the glaze over the top of the meatloaf, reserving the rest for later.
Bake: Place the meatloaf in the preheated oven and bake for about 1 hour. The internal temperature should reach 160°F (71°C). Use a meat thermometer for accuracy.
Glaze Again: In the last 15 minutes of baking, apply the remaining glaze on top of the meatloaf for a flavorful finish.
Cool and Serve: Once cooked, remove the meatloaf from the oven and allow it to rest for 10 minutes before slicing. This will help retain its juices.
