2 ½ cups all-purpose flour
1 teaspoon salt
1 tablespoon granulated sugar
1 cup unsalted butter, chilled and cubed
6-8 tablespoons ice water
1 tablespoon ground cinnamon
1/4 cup brown sugar, packed
1 tablespoon cornstarch
1 egg, beaten (for egg wash)
2 tablespoons granulated sugar (for sprinkling)
Instructions
In a large mixing bowl, combine the flour, salt, and sugar. Add the chilled, cubed butter to the bowl. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Gradually add the ice water, starting with 6 tablespoons. Mix until the dough starts to come together.
Divide the dough into two equal parts, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
In a small bowl, mix the ground cinnamon, brown sugar, and cornstarch.
Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one disc of dough into a rectangle, ensuring even thickness.
Cut the rolled-out dough into rectangles, approximately 3 inches by 5 inches.
On half of the rectangles, spoon a small amount of the cinnamon filling into the center of each.
Brush the edges of the filled rectangles with the beaten egg. Place another rectangle on top and press the edges together to seal.
Use a fork to crimp the edges for extra security. Score the top for a rustic look.
