Ingredients
Scale:
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened to room temperature
1/2 cup granulated sugar
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 large egg
1 cup semi-sweet chocolate chips
1 cup powdered sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
In a large mixing bowl, using an electric mixer, cream the softened butter with the granulated sugar and powdered sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed just until combined.
Using a spatula, gently fold in the chocolate chips until evenly distributed throughout the dough.
Using a tablespoon or cookie scoop, portion the dough and roll each portion into a ball.
Bake in the preheated oven for 10-12 minutes, or until the edges are just golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack. Roll each cookie in powdered sugar to coat completely.
Allow the powdered sugar to set for a few minutes before serving.
