Ingredients
Scale:
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound ground beef (or turkey for a lighter option)
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
1 cup beef broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust for spice level)
Salt and pepper, to taste
Sour cream or Greek yogurt
Shredded cheddar cheese
Chopped green onions
Fresh cilantro, chopped
Sliced jalapeños
Avocado slices for creaminess
Lime wedges for a zesty finish
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, approximately 5-7 minutes.
Drain excess fat if necessary, then stir in the kidney beans, black beans, crushed tomatoes, tomato paste, and beef broth. Mix well to combine.
Season the mixture with chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir thoroughly to evenly distribute the spices.
Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for at least 30 minutes, stirring occasionally.
Once cooking is complete, taste and adjust seasonings as necessary.
