  1. Season the chicken breasts on both sides with salt and pepper. Let the chicken sit at room temperature for about 15 minutes.
  2. In a large skillet, heat the olive oil over medium-high heat until shimmering.
  3. Carefully add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on one side, then flip and cook for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  4. Reduce the heat to low. Layer the slices of fresh mozzarella on top of each chicken breast, followed by slices of tomato. Season with a pinch of salt and pepper.
  5. Cover the skillet with a lid and allow the cheese to melt for about 2-3 minutes.
  6. After the cheese has melted, remove the skillet from heat. Top the chicken with fresh basil leaves and drizzle with balsamic glaze.
  7. Plate the Chicken Caprese and enjoy immediately.
