1 pound ground beef
1 packet taco seasoning (about 1 ounce)
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) corn, drained
1 can (10 ounces) diced tomatoes with green chilies
2 cups tortilla chips, crushed
2 cups shredded cheddar cheese
1 cup sour cream
Chopped fresh cilantro (for garnish)
Sliced green onions (for garnish)
Jalapeño slices (optional, for garnish)
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, brown the ground beef until fully cooked, approximately 6-8 minutes. Drain excess fat if necessary.
Sprinkle the taco seasoning over the cooked beef and mix well. Add 1/4 cup of water and let it simmer for an additional 3-4 minutes.
In the skillet, add the black beans, corn, and diced tomatoes. Stir until fully combined and heated through, about 2-3 minutes.
In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, half of the sour cream, and half of the cheddar cheese. Repeat these layers with the remaining ingredients.
