1 lb ground beef or pork
1 cup shredded cheddar cheese
1 lb bacon (thick-cut preferred)
1/2 cup BBQ sauce (plus more for brushing)
1/4 cup breadcrumbs (optional)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley or chives (for garnish)
Extra BBQ sauce (for dipping)
Instructions
Preheat your grill or oven to medium heat (about 350°F) or to 375°F for baking.
In a large bowl, combine the ground beef or pork, shredded cheddar cheese, BBQ sauce, breadcrumbs (if using), garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix until well incorporated.
Take a handful of the meat mixture, flatten it in your palm, place a small piece of cheddar cheese in the center, and encase it with the meat. Roll it into a ball.
Wrap each meatball with a strip of bacon, ensuring the entire surface is covered.
