2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
Instructions
Preheat your oven to 450°F (232°C).
In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until evenly mixed.
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork until just combined.
Turn the dough out onto a lightly floured surface. Gently knead the dough 5-6 times until it comes together.
Pat the dough into a rectangle about 1-inch thick. Fold the dough in half, then pat it down again into a 1-inch thick rectangle. Repeat this process two more times.
Using a sharp biscuit cutter, cut out biscuits from the dough, pressing straight down without twisting. Place the biscuits on a baking sheet lined with parchment paper.
Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.
Remove from the oven and let them cool slightly before serving.
