1 lb ground beef
1 medium onion, diced
2 cloves garlic, minced
1 packet taco seasoning (1 oz)
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 cup shredded cheese (cheddar or Mexican blend)
4 cups seasoned tortilla chips
1 cup sour cream
1 cup salsa
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup sliced jalapeños (optional)
1/4 cup chopped cilantro (optional)
Instructions
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
Add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Mix well and let simmer for about 5 minutes.
