1 tablespoon goulash seasoning blend (or adjust to taste)
2 cups elbow macaroni or your choice of pasta
1 teaspoon paprika (preferably Hungarian)
1 can (15 oz) diced tomatoes, undrained
2 cups beef broth
1 tablespoon Worcestershire sauce
1 pound ground beef (or substitute with turkey for a leaner option)
1 medium onion, finely chopped
2 cloves garlic, minced
1 bell pepper, diced (any color)
Shredded cheese (optional, for serving)
Fresh parsley, chopped (for garnish)
Instructions
In a large pot or Dutch oven, heat a drizzle of oil over medium heat. Add the chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes until the vegetables are soft and the onion is translucent.
Increase the heat to medium-high and add the ground beef. Cook until browned, about 6-8 minutes, breaking it apart with a spatula. Drain excess fat if necessary.
Stir in the goulash seasoning blend, paprika, and Worcestershire sauce. Mix well to coat the meat and vegetables. Allow the spices to toast slightly for about a minute.
Add the diced tomatoes (with juice), beef broth, and macaroni. Stir to combine, making sure the pasta is submerged in the liquid.
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, or until the pasta is cooked al dente.
