Ingredients

- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups beef or vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 large bell peppers (any color), diced
- 1 pound ground beef (or a meat substitute for a vegetarian option)
- 1 cup cooked rice (white, brown, or cauliflower rice for low-carb)
- Fresh parsley, chopped (for garnish)
- Grated cheese (optional, for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to cook for another 1-2 minutes until fragrant.
- Incorporate the ground beef (or your meat substitute) into the pot, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes.
- Add the diced bell peppers, cooking until they begin to soften, about 3-4 minutes.
- Stir in the diced tomatoes, broth, Italian seasoning, and season with salt and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
- After simmering, stir in the cooked rice.
- Taste and adjust the seasoning if necessary.
- Serve hot, garnished with fresh parsley and a sprinkle of cheese if desired.
