  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and continue to cook for another 1-2 minutes until fragrant.
  3. Incorporate the ground beef (or your meat substitute) into the pot, breaking it apart with a spoon. Cook until browned, approximately 5-7 minutes.
  4. Add the diced bell peppers, cooking until they begin to soften, about 3-4 minutes.
  5. Stir in the diced tomatoes, broth, Italian seasoning, and season with salt and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low and let it simmer for 20-25 minutes.
