Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the sliced strawberries, granulated sugar, cornstarch, and salt. Let it sit for about 15 minutes, until the strawberries start to release their juice and the mixture becomes syrupy.
  3. In a separate bowl, beat the cream cheese until it's smooth. Add the granulated sugar, eggs, and vanilla extract, and mix until well combined.
  4. In another bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  5. Add the melted butter, and mix until the mixture resembles coarse crumbs.
  6. Pour the strawberry mixture into a 9x13 inch baking dish.
  7. Drop the cream cheese mixture by spoonfuls onto the strawberry mixture.
  8. Top the cream cheese mixture with the biscuit topping, spreading it evenly to cover the entire surface.
  9. Bake the cobbler for 40-45 minutes, or until the biscuit topping is golden brown and the filling is bubbly.
  10. Remove the cobbler from the oven, and let it cool for at least 30 minutes before serving.
