1 pound of fresh carrots, washed and peeled
1/4 cup of high-quality honey
2 tablespoons of unsalted butter
Instructions
Slice the cleaned carrots into uniform pieces, about 1/4 inch thick.
In a medium saucepan, add the sliced carrots and cover them with water. Bring to a boil and cook for about 5-7 minutes until tender but still crisp. Drain and set aside.
In the same saucepan, add the butter and allow it to melt over medium heat. Once melted, add the honey and stir until well combined.
Return the cooked carrots to the saucepan and toss them gently in the honey-butter mixture until evenly coated.
Continue to cook the carrots in the glaze for another 3-5 minutes, stirring occasionally until the glaze thickens and coats the carrots.
