  1. Start by preparing your slow cooker. Lightly grease the inside of the slow cooker with cooking spray or butter to prevent sticking.
  2. In a large bowl, layer half of the vanilla wafers at the bottom of the slow cooker. If you’re using pecans, sprinkle half of them over the wafers.
  3. In a saucepan over medium heat, combine the brown sugar, butter, sweetened condensed milk, vanilla extract, and salt. Stir continuously until the mixture is smooth and the butter has melted completely, about 5 minutes.
  4. Once the caramel mixture is ready, pour half of it over the layered wafers and pecans in the slow cooker, ensuring even coverage.
  5. Layer the remaining vanilla wafers on top, followed by the rest of the pecans (if using).
  6. Pour the remaining caramel mixture over the top, making sure to cover the layers evenly.
  7. Cover the slow cooker with its lid and cook on low for about 2-3 hours, or until the wafers are soft and the caramel is bubbling. Keep an eye on it to avoid overcooking.
  8. After cooking, turn off the slow cooker and let it cool for about 15 minutes before serving. This will allow the caramel to set slightly.
  9. If desired, sprinkle mini chocolate chips on top while still warm, allowing them to melt slightly.
