A hearty, satisfying meal that combines the comfort of pierogi, the savory flavor of sausage, and the convenience of a slow cooker.
Ingredients

1 package of pierogi (either homemade or store-bought)
1 pound of Polish sausage, sliced
1 large onion, chopped
3 cloves of garlic, minced
1 cup of chicken broth
1/2 cup of heavy cream
1 tablespoon of olive oil
1 teaspoon of dried thyme
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 cup of shredded cheddar cheese (optional)
Instructions
In a large skillet, heat the olive oil over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the skillet and set it aside.
Add the chopped onion to the skillet and cook until it is translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
Add the pierogi to the slow cooker and top them with the cooked sausage, onion, and garlic.
In a separate bowl, whisk together the chicken broth, heavy cream, dried thyme, salt, and pepper. Pour the sauce over the pierogi and sausage in the slow cooker.
Cook the casserole on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top of the casserole (if using). Cover the slow cooker and cook until the cheese is melted and bubbly.
Serve the Slow Cooker Pierogi & Sausage Casserole hot, garnished with chopped fresh parsley or chives (if desired).
