A delicious and comforting side dish that is perfect for any occasion
Ingredients

3-4 large potatoes, peeled and cubed
1 large onion, sliced
3 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon of black pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1/4 cup of chicken broth
1/4 cup of grated cheddar cheese (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the sliced onions and cook until they're caramelized and golden brown, stirring occasionally. This should take about 20-25 minutes.
Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring constantly to prevent burning.
Add the cubed potatoes, salt, black pepper, garlic powder, and onion powder to the slow cooker. Stir to combine.
Add the caramelized onions and garlic to the slow cooker, stirring to combine.
Pour in the chicken broth and stir to combine.
Cook the potatoes on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, sprinkle the grated cheddar cheese on top of the potatoes (if using). Cover the slow cooker and cook until the cheese is melted and bubbly.
