2 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
4 cups chicken broth (preferably low-sodium)
3 large carrots, sliced into rounds
2 stalks of celery, chopped into small pieces
1 large onion, diced
4 medium potatoes, peeled and cut into cubes
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and pepper to taste
1 tablespoon olive oil (optional)

Instructions
If you prefer a richer flavor, heat the olive oil in a skillet over medium-high heat. Add the chicken pieces and brown them for about 5-7 minutes until golden brown. This step adds depth to the stew but is optional.
