- 2 pounds boneless, skinless chicken breasts or thighs
- 1 cup of your favorite BBQ sauce
- 1 can (20 ounces) of pineapple chunks in juice, undrained
Instructions
- Start by rinsing the chicken under cold water and patting it dry with paper towels.
- Place the chicken breasts or thighs in the bottom of your slow cooker in a single layer.
- Pour the BBQ sauce evenly over the chicken, ensuring each piece is well-coated.
- Drain the pineapple chunks slightly, then scatter them over the chicken and sauce mixture.
- Cover the slow cooker with the lid and set it to cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before the cooking time is up, check the internal temperature of the chicken.
- Once cooked, remove the chicken from the slow cooker and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir it well with the BBQ sauce and pineapple mixture.
