This Slow Cooker BBQ Meatloaf recipe elevates the classic meatloaf recipe with a tangy barbecue flavor profile that is sure to please the entire family. 1 ½ pounds ground beef
1 cup breadcrumbs (or gluten-free alternative)
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
½ cup milk
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 cup BBQ sauce (your favorite brand or homemade)
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions
In a large bowl, combine the ground beef, breadcrumbs, egg, chopped onion, minced garlic, milk, salt, black pepper, Worcestershire sauce, thyme, and smoked paprika. Use your hands to mix until all ingredients are well incorporated.
Shape the mixture into a loaf that will fit comfortably in your slow cooker. Make sure to compact it slightly for even cooking.
In a separate bowl, mix together the BBQ sauce, brown sugar, and apple cider vinegar. Set aside half of this mixture for glazing later.
