A comforting dish from the Great Depression that combines simple ingredients to create a hearty meal.
Ingredients
Scale:
4 large potatoes, peeled and thinly sliced (approximately 2 to 3 pounds)
2 large onions, thinly sliced
1 cup of cream of mushroom soup (or homemade equivalent)
Salt and pepper to taste
Instructions
Prep the Vegetables: Start by peeling the potatoes and slicing them thinly, about 1/8-inch thick. Do the same with the onions.
Layer the Ingredients: In the slow cooker, begin layering the sliced potatoes and onions. Alternate between the two, seasoning each layer with salt and pepper.
Add the Soup: Pour the cream of mushroom soup evenly over the top of the layered potatoes and onions.
Cook: Cover the slow cooker and set it to low heat. Cook for about 6 to 8 hours until the potatoes and onions are tender.
Serve: Stir gently to mix the layers, and serve hot, garnished with fresh herbs if desired.
