Ingredients

1 ½ lbs of chicken thighs or breasts, skinless and boneless
2 cups of long-grain white rice
4 cups of chicken broth or stock, preferably low-sodium
Salt and pepper to taste
1 teaspoon of garlic powder (optional)
1 tablespoon of soy sauce (optional)
Instructions
Rinse the chicken thighs or breasts under cold water and pat them dry with paper towels. Season with salt, pepper, and garlic powder if using.
In the slow cooker, place the seasoned chicken at the bottom. Pour in the long-grain white rice, spreading it evenly over the chicken.
Carefully pour the chicken broth over the rice and chicken. Ensure that all the rice is submerged in the broth.
Put the lid on the slow cooker and set it to cook on low for approximately 6 to 8 hours or on high for about 3 to 4 hours.
About 30 minutes before serving, check the rice. If it seems too dry, you can add an additional half cup of broth or water.
Once cooked, gently fluff the rice with a fork to separate the grains. Serve the chicken and rice hot, garnished with fresh herbs if desired.
