3-4 pounds of beef chuck roast (look for well-marbled meat for tenderness)
12 ounces of your favorite dark beer (stout or porter works well)
1 packet (about 1 ounce) of dry onion soup mix for added depth of flavor
Instructions
Begin by spraying the inside of your slow cooker with a non-stick cooking spray or lightly greasing it.
Pat the beef roast dry with paper towels and season it generously with salt and pepper on all sides.
Nestle the seasoned roast into the slow cooker.
Pour the dark beer over the roast, followed by sprinkling the dry onion soup mix on top.
Cover the slow cooker with its lid, set it to low heat, and allow it to cook for 8-10 hours.
About 30 minutes before serving, check the beef roast for tenderness. It should easily shred with a fork when it's done.
Once cooked, remove the roast from the slow cooker and let it rest for a few minutes. Then, shred the meat using two forks or chop it into chunks.
