2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup whole milk
1 large egg
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla extract (for drizzle)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix thoroughly.
Add the cold, cubed butter into the dry ingredients. Use a pastry cutter or fingertips to blend until the mixture resembles coarse crumbs.
In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet mixture into the dry ingredients. Stir until just combined.
Turn the dough out onto a floured surface. Gently knead the dough 2-3 times until it comes together.
Pat the dough into a 1-inch thick circle. Cut into 8 wedges and place them on the prepared baking sheet.
Bake for 15-18 minutes or until the scones are golden brown. Remove from the oven and allow them to cool on a wire rack.
While the scones cool, prepare the icing drizzle by mixing powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Once the scones are cool, drizzle the icing over the top using a spoon or piping bag.
