Ingredients
Scale:
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 pound boneless, skinless chicken breasts, diced
4 cups chicken broth
1 medium head of cabbage, chopped (about 4 cups)
2 medium carrots, sliced
2 celery stalks, sliced
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 tablespoon soy sauce (optional for an Asian-inspired twist)
Fresh parsley, chopped (optional, for garnish)
Crusty bread or crackers (for serving)
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.
Add the minced garlic, stirring for about 30 seconds until fragrant.
Introduce the diced chicken breasts, cooking for 5-7 minutes until the chicken is no longer pink.
Pour in the chicken broth, bringing it to a gentle boil.
Add the chopped cabbage, sliced carrots, and celery to the pot. Stir in the dried thyme, oregano, salt, and pepper.
Reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes.
If desired, add soy sauce during the last 5 minutes of cooking.
Once cooked, taste and adjust seasoning as needed before serving.
