  1. Preheat your oven to 350°F (175°C).
  2. Cook 2 cups of rice according to package instructions. Set aside.
  3. In a large skillet over medium heat, add a teaspoon of oil. Sauté the chopped onions and bell peppers for about 5-7 minutes until softened.
  4. Add the sliced smoked sausage into the skillet with the vegetables and sauté for another 5 minutes until heated through.
  5. In a large mixing bowl, combine the sautéed sausage and vegetable mixture, cooked rice, cream of mushroom soup, reserved pineapple juice, garlic powder, paprika, salt, and pepper. Mix well.
  6. Gently fold in the drained pineapple chunks.
