2 pounds of Yukon Gold or red potatoes, washed and cut into wedges
6-8 cloves of fresh garlic, minced
1/4 cup of extra virgin olive oil, for roasting
2 teaspoons of dried rosemary or thyme, or a combination of both
1 teaspoon of kosher salt, to taste
1/2 teaspoon of freshly ground pepper
Fresh parsley, chopped, for garnish (optional)
Grated Parmesan cheese, for garnish (optional)
Instructions
Preheat the oven to 425°F (220°C).
Cut the potatoes into wedges and place them in a large mixing bowl.
Add the minced garlic, olive oil, dried herbs, salt, and pepper to the bowl with the potatoes. Toss until well coated.
Spread the coated potatoes in a single layer on a large baking sheet lined with parchment paper.
Place the baking sheet in the preheated oven and roast for 30-35 minutes, turning halfway through.
Once cooked, remove the potatoes from the oven, sprinkle with fresh parsley, if desired, and serve hot.
