Ingredients
Scale:
1 ½ cups of graham cracker crumbs, finely crushed
⅓ cup of melted butter, unsalted
¼ cup of granulated sugar
1 cup of fresh raspberries (or frozen, thawed)
½ cup of granulated sugar
8 oz of cream cheese, softened
1 tsp of vanilla extract
1 ½ cups of heavy whipping cream, chilled
1 packet of unflavored gelatin (about 2 ½ teaspoons)
2 tbsp of water
1 cup of whipped cream
Fresh raspberries for garnish
Mint leaves for garnish (optional)
Instructions
Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Chill in the refrigerator while you prepare the filling.
Make the raspberry puree: Puree the raspberries and sugar in a blender until smooth. Strain through a fine mesh sieve to remove seeds.
Prepare the gelatin: In a small bowl, sprinkle gelatin over water. Let it sit for about 5 minutes to bloom. Heat gently until dissolved.
Make the cream cheese mixture: Beat softened cream cheese and vanilla extract until smooth. Gradually add the raspberry puree and dissolved gelatin, mixing well.
Whip the cream: In a separate bowl, whip the heavy cream until firm peaks form. Gently fold the whipped cream into the raspberry cream cheese mixture until well combined.
Assemble the dessert: Pour the raspberry cream filling over the chilled crust. Smooth the top with a spatula. Chill in the refrigerator for at least 4 hours or until set.
Garnish and serve: Before serving, top with whipped cream, fresh raspberries, and mint leaves. Slice and enjoy.
