In a medium saucepan, combine the sugar, corn syrup, water, and salt. Stir gently to mix and ensure no sugar is left undissolved at the bottom.
Place the saucepan over medium heat and cook, stirring occasionally, until the sugar dissolves completely. This will typically take about 5-7 minutes.
Once the mixture starts to boil, stop stirring and let it boil undisturbed until it reaches the hard crack stage (about 300°F or 149°C). Use a candy thermometer for accuracy, watching closely for signs of bubbling and color change.
Remove the saucepan from the heat and carefully stir in the baking soda. The mixture will bubble up, so be cautious; it’s normal for it to foam significantly.
Quickly add the butter and vanilla extract, stirring until fully combined. This step adds richness and a delightful aroma to your candy.
Pour the candy mixture onto a greased baking sheet or a silicone mat, spreading it evenly. You can also use cookie cutters to create fun shapes at this stage; just make sure to work quickly before it sets.
Before the candy cools completely, sprinkle your choice of toppings over the surface, pressing them lightly into the candy. This is your chance to get creative with colors and textures!
Allow the candy to cool completely at room temperature for about 1-2 hours, or until it has hardened sufficiently to be handled.
Once set, break the candy into pieces or cut it into your desired shapes, enjoying the satisfaction of your homemade Ragtag Candies!
