8 ounces cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup crushed pineapple, drained very well
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup chopped pecans
1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
In a large mixing bowl, combine the softened cream cheese, shredded sharp cheddar cheese, crushed pineapple, powdered sugar, and vanilla extract. Use a hand mixer on medium speed to blend the ingredients until smooth and well combined, about 2-3 minutes.
Once the mixture is thoroughly combined, use your hands to shape it into a ball. Wetting your hands slightly can help in forming the cheese ball without too much mess.
Wrap the cheese ball tightly in plastic wrap and refrigerate for at least 2 hours, or until firm.
While the cheese ball is chilling, chop the pecans finely and place them in a shallow bowl. Optionally, lightly toast the pecans in a dry skillet over medium heat for about 5 minutes.
Once the cheese ball is firm, remove it from the refrigerator and unwrap it. Roll the cheese ball in the chopped pecans, pressing gently to ensure the pecans stick evenly to the surface.
If desired, sprinkle some fresh chopped parsley on top for garnish. Place the cheese ball on a serving platter and accompany it with dippers such as crackers, pretzels, or fresh fruit.
