A comforting dish that combines traditional Polish flavors with the ease of a baked casserole, featuring creamy, cheesy, and hearty elements perfect for families.
Ingredients

2 cups of frozen potato pierogi
1 cup of shredded cheddar cheese
1 cup of sour cream
1 cup of cottage cheese
1 medium onion, diced
2 tablespoons of butter
1 teaspoon of garlic powder
Salt and pepper, to taste
1 teaspoon of dried parsley
1 cup of breadcrumbs (panko or regular)
2 tablespoons of melted butter
Additional shredded cheese (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook for about 5-7 minutes until translucent and slightly caramelized.
In a large bowl, combine the sautéed onions, frozen potato pierogi, cheddar cheese, sour cream, cottage cheese, garlic powder, dried parsley, salt, and pepper, mixing until well combined.
Grease a 9x13-inch baking dish and pour the pierogi mixture into it, spreading evenly.
In a separate bowl, mix the breadcrumbs with melted butter and sprinkle evenly over the casserole. Add additional shredded cheese on top if desired.
Bake in the preheated oven for 30-35 minutes until the top is golden brown and bubbling.
